Fattoria Ma’ Falda has a small family-run dairy for the artisanal production of raw milk goat cheese.
Every day immediately after milking, we process the milk from our goats. We only process raw milk, so the milk maintains its natural microbiological characteristics with specific effects on the organoleptic characteristics of the cheese.
The particularities of the milk change with the changing of the seasons, and consequently also the properties of the cheese.
We produce cheeses of various types, soft, semi-soft and hard cheeses, from sour curd and sweet curd, fresh and mature cheeses.
All processing is done exclusively by hand using natural methods and techniques in full respect of the health and well-being of animals and the environment. The purity of the product is guaranteed by careful periodic checks of the milk and cheese.
Adjacent to the dairy we have a small shop for direct sales, open from March to the end of October.

Soft sweet curd paste. Creamy cheese with a flowery rind of penicillium candidum, very tasty, short-aged.

Fiore Blu
Blue cheese; that is, cheese with an internal bloom of penicillium roqueforti. Depending on the production it can be more or less soft. Delicious flavor
